SSJ’s SPICY SCHEZWAN FRIED VEG. PILAF




INGREDIENTS

Rice – 2cups (soaked in water for 30 minutes)
Potato – ½ cup (chopped in small cubes)
Cauliflower – 1 cup (cut in small florets)
Tomato – ½ cup (chopped)
Mushrooms – ½ cup (chopped)
Green Peas – ½ cup
Onion – 1 (sliced)
Garlic – 4cloves (chopped)
Green chili – 2 (chopped)
Black pepper – 8-10
Cloves – 3-4
Cumin – 1tbsp.
Salt to taste
Red chili powder – ¼ tsp.
Schezwan spice – 1 pack (25gms.)
Oil  for frying and 2tbsp.
Water – 2cups

METHOD

Heat oil in pan and deep fry all veggies including potatoes, cauliflower, green peas and mushrooms and keep aside.
Now heat 2 tbsp. oil in pressure cooker. Add cumin, cloves and back pepper. When they crackle, add garlic and onion and stir fry for a minute.
Add tomato and green chili and cook for 1 more minute.
Now add all fried veggies and salt, red chili powder and schezwan spice and mix well.
At last add rice and mix well carefully then add water and close the lid of cooker and cook on high flame till one whistle. After one whistle, cook for another 5minutes on low flame.
Your spicy schezwan fried veg. pilaf is ready to serve.
