SSJ’s LYCHEE JELLO SHORTIES with SPICY MANGO SALSA

Hey Happy-Eaters,

So hows your weekend going on? Its my day today and it was amazing with countless wishes thru every possible way. But I will celebrate it tomorrow on Sunday as my big bro’s b’day also coming 3days later so we’ll celebrate it together every year.

So now as I promised u, its time for the bonus recipe of today and when its my birthday then why don’t we try something sweet again but in a unique way…

INGREDIENTS
For Lychee Jello Shorties :
  • Lychee (unseeded) – 1cup, chopped
  • Lychee – 4 full (unseeded)
  • Lychee crush – ½ cup
  • Gelatin – 1tbsp.


For Spicy Mango Salsa :
  • Mango – ½ cup chopped
  • Fresh cream – ¼ cup
  • Red chili powder – 1tsp.
  • Honey – 1tbsp.


METHOD

  • Mix lychee crush well with 1 cup of water and mix chopped lychee in it.
  • Melt gelatin in 2tbsp. warm water and mix in lychee mixture.
  • Put this mixture in small bowls or jelly bowls. Set one whole lychee in centre and let it be set in fridge for 1-2 hours.
  • Mix all the ingredients of mango salsa well and fill it in whole lychee when jelly set down and serve chill.

SSJ’s PENNE PASTA BREADED PIZZIES

Hey Happy-Eaters,

I am back with another new recipe of mine. You know, I love pasta a lot and every time I have pasta, I think to do something different with it and see, I have done it finally. Here is the recipe :

INGREDIENTS

For Pasta :
  • Penne pasta – 50gms.
  • Milk – ½ cup
  • Corn flour – 1tsp.
  • Butter – 1tbsp.
  • Garlic – 2 big cloves, grated
  • Salt to taste
  • Pepper powder – ½ tsp.
  • Oregano, thyme, basil – ½ tsp.
  • Carrot – ¼ cup thinly striped
  • Capsicum – ¼ cup thinly striped
  •  

For Pizzies :
  • Bread slices – 4
  • Egg – 1
  • Cheese spread – 4tsp.
  • Ginger garlic paste – 1tbsp.


METHOD

For Pasta :
  • Boil the pasta as per the instruction in the packet. And keep aside
  •       Heat butter in a pan, add the grated garlic and saute for a minute
  • Once its done add the corn-flour saute for a second let it not turn brown.
  • Add milk and stir it continuously to avoid lumps.
  • Once the mixture starts thickening add carrots and capsicum and cook for 1 minute then add oregano, thyme, basil, salt, pepper powder.
  • Add  pasta, mix well and cook for another 1 minute and keep it aside to make it cool.


For Pizzies :
  • Beat egg with pinch of salt and brush it on edges of bread slices.
  • Now keep 2tbsp. egg for brushing and mix left egg mixture with ginger garlic paste in pasta slowly.
  • Spread cheese spread on each slice’s one side then spread pasta softly.
  • Now put these bread slices in your pre-heated Tandoor / Oven (preheat on 180degree) and let it cook for 3-4 minutes.
  • Then when it comes out mostly dry, just apply one more brushing of egg on it and put back in tandoor / oven for 2 minutes.
  • Serve hot with sauce/ ketchup.


So this is the new avatar of penne pasta in pizza style. Try it and I bet you love it. Keep watching for another bonus recipe for today as its my b’day so why don’t you have an advantage of one more recipe.

SSJ’s FRESH CORN – SEMOLINA HALWA

Hey Happy-Eaters,

Finally here comes the 1st recipe of July Recipe Week’13 and why don’t we start it with some sweetness and as it’s the best season for fresh corns available in market so I tried it in new style. Here is the recipe below…

INGREDIENTS

  • Fresh corn seeds – ½ cup
  • Semolina(suji)  – 1cup
  • Dates – 4-5 chopped
  • Ghee (clarified butter) – ¼ cup
  • Milk – ½ cup
  • Sugar – ½ cup


METHOD

  • Boil corn seeds in milk then add sugar and cook till sugar melts then cook another 5 minutes on low flame. Keep aside.
  • Heat ghee in a pan, add chopped dates and stir fry for a minute.
  • Add semolina and cook till smells comes out and semolina starts changing color.
  • Now add corn and sugar syrup mixture and cook another 2 minutes on medium flame.
  • Serve it chilled…
