SSJ’s ROASTED CHILI POTATOES WITH CARAMALIZED PEARS SAUCE


Hey Happy-Eaters,



Hope you all enjoyed your weekend well but Navratras still going on so why stopped at old recipes. Here is one more recipe for you all…



SSJ’s ROASTED CHILI POTATOES WITH CARAMALIZED PEARS SAUCE



INGREDIENTS



For Roasted Potatoes :

Potatoes – 5-6 , par-boiled & cut in 1inch pieces

Salt to taste

Red chili flackes – 2tsp.

Roasted cumin powder – 1 tsp.

Coriander – 2 tbsp. chopped



For Pears Sauce :

Pears – 2, finely grated

Sugar – ½ cup

Star Anise – 1

Lemon juice – 2 tbsp.

Pomegranate seeds – 1 tbsp.



METHOD



For Roasted Potatoes :

Mix potatoes with salt, cumin powder , chili flakes and coriander  and put it in a oven tray and put in your preheated oven at 250 degrees for 12-15 minutes or till potatoes turn crispy golden.



For Pears Sauce :

Add sugar in a pan on medium heat, add grated pears and star anise and mix well.

Cook for 5 minutes ot till sugar dissolves and starts thicken.

Switch off the gas and add lemon juice and pomegranate seeds and mix well.



Serve hot Chili Roasted Potatoes with this Pears Sauce on it with garnish of fresh coriander.

SSJ’s SAGO & PAPAYA PUDDING




Hey Happy-Eaters,



How are you all? Hope enjoying the weekend well as I do J so here is another recipe from my kitchen. You can again enjoy this dessert even in Navratra Fasts. Simple few ingredients and you will get a amazing dessert at end. How? Here is the process :



SSJ’s SAGO & PAPAYA PUDDING



INGREDIENTS



Sago Seeds ( Sabudana) – 100 gms.

Papaya – 200 gms.

Fresh Cream – 50 ml.

Sugar – 1 cup, 1 tsp.

Desiccated Coconut – 2 tbsp.

Cinnamon – 2 inch





METHOD



Heat 1 cup sugar with ¾ cup water with cinnamon stick in it till sugar dissolves and sugar syrup start thicken.

Same time heat 2-3 cup water in another deep pan, when water start boiling add sago and cook on low flame till sago seems transparent and soft. Approximately 15-20 minutes. Now strain sago seeds and wash with cold water and add to sugar syrup and let it stand for 5 minutes.

Puree the papaya flesh and add 2 tbsp. in sago mixture with fresh cream.

Now fill your bowls with sago mixture and put it in fridge for 30 minutes to get it set well.

Now heat a pan on gas and add desiccated coconut and roast till start brown and add 1tsp. sugar and close the gas.

Now take sago mixture back from fridge and put a layer of papaya puree on it and garnish with roasted coconut sugar mix and serve chill.

SSJ’s TEA SMOKED PANEER (COTTAGE CHEESE) WITH SWEET n SOUR POMEGRANATE SAUCE




Hey Happy-Eaters,

I was so much busy today but at last I got some free time at night so I thought to cook something quick and here comes the result…


SSJ’s TEA SMOKED PANEER WITH SWEET n SOUR POMEGRANATE SAUCE

This recipe was a mix inspiration from my 2 favorites : The Spiced Men of Britain and The Bakers Brothers.


INGREDIENTS

Paneer (Cottage Cheese) – 200 gms.
Salt – ½ tsp.
Pepper powder – 1 tsp. (Optional)
Butter – 25 gms. (3tbsp.)
Oil – 1tsp.
Coriander – few leaves
Pomegranate seeds – ¼ cup
Lemon juice – 2tbsp.
Ginger – 2inches , grated
Sugar – 1tsp.


For Smoke :
Rice (any) – ½ cup
Sugar – 2 tbsp.
Tea leaves (Any) – 1 tbsp.


METHOD

Cut paneer in ½ inch thick big slices and marinate with pepper powder.
Put rice than sugar and tea leave in a pan and put a grill on it. Now heat pan on medium flame and put marinated paneer slices on grill and cover with a lid/ plate for 3-4 minutes or till smoke comes out. Now change the side of paneer pieces and smoke for 2-3 minutes on another side too.
Heat ½ tbsp. butter with ½ tsp. oil in another pan and just sauté full coriander leaves with stem for just 1 minute and keep aside.
Now heat leftover butter with ½ tsp. oil. Add lemon juice to grated ginger and when ginger changes color just press it through a strainer and add this juice to pan with sugar. Add pomegranate seeds at last and cook for just 2 minutes on high heat.
Spread buttery coriander on plate, adjust Smoked paneer pieces and serve with ready sauce on it.

That’s it. Simple easy and soooo delicious. Trust me, when you are fasting, it will make your day. Try it…

SSJ’s FRUIT CHAT PIE - FAST SPL.




Hey Happy-Eaters,



So Navratras begins yesterday and I have posted many Navratra spl. Recipes but those all recipe you can made in Fasts but not everyone can eat them. Now its time for a Pure recipe for them who do Fasts. Why to eat same simple food which you are eating from years, just give them some style some twists and they will come in a new Avatar and my this recipe shows you the same thing…



SSJ’s FRUIT CHAT PIE



INGREDIENTS



For Pie Crust :

Kuttu ka Atta – 250 gms.

Butter – 175 gms.

Iced Water - 4-5 tbsp.


For Filling :

Sugar – 4tbsp.

Desiccated Coconut – 3tbsp.

Papaya – ¼ cup, diced

Cucumber – ¼ cup, diced

Pears - ¼ cup, diced

Banana - ¼ cup, diced

Apple - ¼ cup, diced

Lemon juice – 1tbsp.

Salt – ½ tsp.



METHOD



Mix kuttu ka atta with cold butter well and add 4-5 tbsp. iced water to make a hard but smooth dough. Cover it with cling film and put it in fridge for 15-20 minutes.

Heat 2tbsp. sugar with few drops of water in a pan. When sugar starts caramelize, add pears and apple and mix well. Cook them under cover for 2 minutes.

Now add cucumber also and cook another 1 minute.

Now add papaya and banana and cook for last 1 minute.

Switch off the gas and add 1tbsp. desiccated coconut and lemon juice and mix well.

Now take kuttu dough out of fridge and cut it in two pieces. Roll it slowly and put it in Pie pan/mould . (Kuttu dough breaks very easily and tough to roll so put it in Pie pan and spread it slowly in all sides to cover fully. Now put any beans (example : rajma, chane) in this and put Pie pan/ mould in your preheated Oven on 250 degree for 7-8 minutes.

Take Pie pan/mould  out and spread sugar and desicated coconut in it. Now fill with  fruit chat filling. Cover it with leftover kuttu dough and put it back in Oven on high heat for another 5-7 minutes or till crust turn brown crispy.

Take it out, let it rest for few minutes before open the mould. Cut and serve hot or normal. It tastes Devine…




TIPS : I have used brown sugar but you can use simple one also.

           You can use any variation in fruits.

            Kuttu is a very dry flour so when you bake it, breaking lines will appear soon but don’t get upset but just handle it carefully.



Now this is one more reason to do Fasts J

SSJ’s BANANA EGGLESS PANCAKES





Hey Happy-Eaters,



In last few days, many recipes posted and now I am bit tired so I think its time for a simple, easy and so quick recipe and also one of my favorite one.



SSJ’s BANANA EGGLESS PANCAKES



INGREDIENTS



All purpose flour ( Maida) – 1cup

Banana – 2 , fully ripe

Milk – ½ cup

Cinnamon Powder – 1tsp.

Sugar – 1tbsp.

Baking Soda – ½ tsp.

Butter /Oil – 2 tsp.



For Serving :

Corn syrup – 4tbsp.

Cinnamon powder – pinch



METHOD



Mash bananas finely with help of a fork.

Mix flour with sugar, baking powder and cinnamon powder.

Add mashed bananas and mix well.

Now add milk slowly and mix well to get a thick batter. Keep it aside for 5minutes.

Heat a flat pan with 1 tsp. oil/butter.

Add a ladle of banana-flour mix on pan and let it cook on medium heat for a minute when sides start going brown.

Change the side of pancake and let it cook for another side.

Mix cinnamon powder with corn syrup and serve hot pancakes with it.





So I don’t think that pancakes can be easier than this. Try it and enjoy…

SSJ’s SUPER SPICED BLACK COFFEE



 
So Happy-Eaters,



How’s everything going on??? Feeling tired? Then here comes my another recipe to give you a boost. If you are a Coffee lover and specially Black Coffee lover than you must give it a try… you can also this spice mix after making.Here below the spices you need :


INGREDIENTS

(For 2)



Whole Peppercorns (Kali Mirch) – 10-12

Cloves (Long) – 2-3

Cinnamon (Dalchini) – 1 inch

Fennel seeds (Saunf) – 1tbsp.

Nutmeg Powder – ¼ tsp.

Any Premium Coffee Powder

Honey – 1tsp. (Optional)



METHOD



Put all spices in your Pestle & Mortar or in Mixer, grate fresh nutmeg and grind just coarsely. 

Heat 1 cup water in a pan, add 1 tsp. spice mix for 1 cup and let it cook for 5 minutes.

Add 1 full tsp. Coffee powder (or as much as you required, depends on your personal taste). Mix and Now let it cook for 5 minutes more.

Strain it in your Coffee mug and add 1 tsp. honey. Honey will maintain spices flavor well. And enjoy it…



I bet this Spiced Black Coffee with give you great relax after a tired day. Try it. You can also add Green Cardamom and some Chili Powder (if you love it too spicy) as per your choice.

SSJ’s LAUKI & KHOYA SWIRLS (SSJ’s BOTTLE GUARD & CLOTTED MILK SWIRLS)





Hey Happy-Eaters,



Tomorrow will be 1st Navratra so why don’t welcome this with a sweet dish again. A simple, easy and quick recipe with as usual few ingredients. So I am not in mood to waste your precious time. Here is another recipe from my own collection…



SSJ’s LAUKI & KHOYA SWIRLS (SSJ’s BOTTLE GUARD & CLOTTED MILK SWIRLS)



INGREDIENTS



Lauki – 1 long sized

Sugar – ¾  cup

Powdered Sugar – ¼ cup

Khoya – ½ cup

Almonds – 3-4, chopped

Desiccated Coconut – 2tbsp.

Green Cardamom (Chhoti Elaichi) – 2-3



METHOD



Peel the lauki first and keep out thin shavings of outer green skin.

Heat ¾ cup water with ¾ cup sugar in a deep pan , crush 2 cardamoms and add them also in sugar syrup. When sugar dissolves, let it cook another 5 minutes on low heat.

Add Lauki shaving in sugar syrup and let it stand for 15-20 minutes.

Meanwhile add Khoya and powdered sugar in pan and mix well on low heat till khoya becomes soft.

Add crushed cardamom seeds, chopped almonds and keep it aside to make it cool.



Now time to make swirls. Cut a 10*10 sized cling film and spread little oil in centre. Now take Bottle-gourd shavings and put them one by one with each other (remember they must have same size) to make it around  6inches square, put one more layer to show the thickness.

Now spread Khoya mix on it with thick layer and this layer should be ½ inches less from all sides to inside.

At last pick cling film from one side and roll it to make swirl. Make it bit tight from both sides and put it in refrigerator for 2-3 hours (summer time).

Now take it out when it is set, open the cling film and cut the swirls carefully with any sharp knife and serve chill.





This recipe was the earliest version of my all swirl recipes (Choco Apple Swirls and Tricolor Swirls) but never posted before. So now its your too. Make it and enjoy it.

SSJ's DAAL MAKHANI - NO ONION-GARLIC RECIPE (CREAMY LENTIL)



So as just one day left now for Navratras , why not share something everyone's favorite but without ONION-GARLIC this time. ya, i am talking about the famous Indian DAAL MAKHANI... so here is the recipe specially for you Happy-Eaters...


INGREDIENTS

Urad Daal - 1 cup, soaked overnight
Tomato - 1, chopped finely
Tomato Puree - 3tbsp.
Ginger - 1 inch, finely chopped
Green Chili - 1-2 , slit
Cumin seeds - 1/2 tsp.
Butter - 50 gms.
Oil - 1tsp.
Fresh cream -1/2 cup
Salt to taste
Turmeric - 1/4 tsp.
Red chili powder - 1/4 tsp.
Garam Masala - 1/2 tsp.
Asafoetida (Hing) - a pinch

METHOD

Boil the soaked daal with 2 cups of water and pinch of salt and asafoetida.

Heat a pan with oil and butter. Add Cumin seeds and let them crackle.
Now add chopped ginger and cook for 2 minutes.
Add chopped tomatoes and cook till tomatoes start soften.
Add green chilies as per your own taste. if you don't want then you can skip them also.
Add Tomato puree to get rich flavor of tomatoes.
Add salt, turmeric and red chili powder. mix well and cook for 3-4 minutes.
Cook till oil starts coming on edges.
Add boiled Daal now with cooking liquid also. mix well.
Cook on high heat till daal start boiling. add extra water if needed.
Cook on low heat after boiling till Daal starts thicken, approx 7-8 minutes.Add Garam masala also now.
Now add fresh cream and mix well.
After adding cream just cook for 2-3 minutes.Serve hot with garnish of fresh cream.


So just make it and enjoy with your family even in Navratras.
