SSJ’s LAUKI & KHOYA SWIRLS (SSJ’s BOTTLE GUARD & CLOTTED MILK SWIRLS)

Tomorrow will be 1st Navratra so why don’t welcome this with a sweet dish again. A simple, easy and quick recipe with as usual few ingredients. So I am not in mood to waste your precious time. Here is another recipe from my own collection…



SSJ’s LAUKI & KHOYA SWIRLS (SSJ’s BOTTLE GUARD & CLOTTED MILK SWIRLS)



INGREDIENTS



Lauki – 1 long sized

Sugar – ¾  cup

Powdered Sugar – ¼ cup

Khoya – ½ cup

Almonds – 3-4, chopped

Desiccated Coconut – 2tbsp.

Green Cardamom (Chhoti Elaichi) – 2-3



METHOD



Peel the lauki first and keep out thin shavings of outer green skin.

Heat ¾ cup water with ¾ cup sugar in a deep pan , crush 2 cardamoms and add them also in sugar syrup. When sugar dissolves, let it cook another 5 minutes on low heat.

Add Lauki shaving in sugar syrup and let it stand for 15-20 minutes.

Meanwhile add Khoya and powdered sugar in pan and mix well on low heat till khoya becomes soft.

Add crushed cardamom seeds, chopped almonds and keep it aside to make it cool.



Now time to make swirls. Cut a 10*10 sized cling film and spread little oil in centre. Now take Bottle-gourd shavings and put them one by one with each other (remember they must have same size) to make it around  6inches square, put one more layer to show the thickness.

Now spread Khoya mix on it with thick layer and this layer should be ½ inches less from all sides to inside.

At last pick cling film from one side and roll it to make swirl. Make it bit tight from both sides and put it in refrigerator for 2-3 hours (summer time).

Now take it out when it is set, open the cling film and cut the swirls carefully with any sharp knife and serve chill.





This recipe was the earliest version of my all swirl recipes (Choco Apple Swirls and Tricolor Swirls) but never posted before. So now its your too. Make it and enjoy it.
