I was so much busy today but at last I got some free time at
night so I thought to cook something quick and here comes the result…
SSJ’s TEA SMOKED PANEER WITH SWEET n SOUR POMEGRANATE SAUCE
This recipe was a mix inspiration from my 2 favorites : The
Spiced Men of Britain and The Bakers Brothers.
INGREDIENTS
Paneer (Cottage Cheese) – 200 gms.
Salt – ½ tsp.
Pepper powder – 1 tsp. (Optional)
Butter – 25 gms. (3tbsp.)
Oil – 1tsp.
Coriander – few leaves
Pomegranate seeds – ¼ cup
Lemon juice – 2tbsp.
Ginger – 2inches , grated
Sugar – 1tsp.
For Smoke :
Rice (any) – ½ cup
Sugar – 2 tbsp.
Tea leaves (Any) – 1 tbsp.
METHOD
Cut paneer in ½ inch thick big slices and marinate with
pepper powder.
Put rice than sugar and tea leave in a pan and put a grill
on it. Now heat pan on medium flame and put marinated paneer slices on grill
and cover with a lid/ plate for 3-4 minutes or till smoke comes out. Now change
the side of paneer pieces and smoke for 2-3 minutes on another side too.
Heat ½ tbsp. butter with ½ tsp. oil in another pan and just
sauté full coriander leaves with stem for just 1 minute and keep aside.
Now heat leftover butter with ½ tsp. oil. Add lemon juice to
grated ginger and when ginger changes color just press it through a strainer and
add this juice to pan with sugar. Add pomegranate seeds at last and cook for
just 2 minutes on high heat.
Spread buttery coriander on plate, adjust Smoked paneer
pieces and serve with ready sauce on it.
That’s it. Simple easy and soooo delicious. Trust me, when
you are fasting, it will make your day. Try it…
