I was so much busy in my HOMEMADE RECIPES FEST and just forgot that DIWALI is just 1 day away now and still I have not prepared any sweet. Why not try something new again for this Diwali to make it healthy, not scary for people who run away with the name of sweets. Yes, you have read right… I am talking about a Healthy Sweet Recipe with just 3 main ingredients… 1 fruit, 1 vegetable and 1 ??? that’s the Secret Healthy Ingredient, you’ll get to know in few seconds now. Here comes…
SSJ’s APPLE & CARROT SANDWICH TREATS
Apple – 2 large, peeled and small diced
Carrots – 2 large, peeled and grated (only red/orange part)
Sugar – 2tsp., 1tbsp. and 2tsp.
Milk – 2tbsp.
SECRET INGREDIENT : Oats Flour – ¼ cup
Heat apples with 2 tsp. sugar in a deep pan till sugar dissolves and apple become soft (like caramelizing apples). Let it cool.
Till then add grated carrots with 1 tbsp. sugar till sugar dissolves and carrots start sticky. Add milk and cook on high heat till milk evaporate. Keep it aside.
Now make puree of soft apple pieces and put back in same pan with 2tsp. sugar, mix well and cook on high heat.
Add Oats flour and mix well, with no lumps. Cook on high heat till it start drying, approx. 2 minutes. Now keep it aside to get cool.
Put carrots mix in your mixer to get a rough mixture.
Cut a 6*8 sized cling film, rub some butter/oil on it.
Now spread apple mixture on cling film as ¼ inch thick.
Spread carrots mixture on half on it, very thinly.
Now pull up cling film softly and cover the carrot mixture with the left part of spreaded apple mixture. Keep it in fridge for minimum 2 hours to get set.
Now cut slices and serve chill.
Its easy, simple and fastest Diwali Sweet Recipe, you can make anytime, even now just in few minutes. You can add dry fruits as per your choice, my version is just experimental so I have keep it simple.
